Punkin Chili??

Ok, I seriously just stumbled across this recipe I've had since like last fall... I'm thinking this sounds good for dinner, tomorrow? You up for it!?

Quick & Easy Pumpkin Chili

1 - lb ground turkey or ground sirloin
1/2 - cup onion, chopped
1 - 14.5 oz can Zesty Chili Style Diced Tomatoes, undrained
1 - 8 oz can tomato sauce
1 - 1.25 oz packet mild chili seasoning
1 1/2 - cups water
1 - 16 oz can Bush's pinto beans, drained & rinsed
1 - 16 oz can Bush's kidney bean, drained & rinsed 
1 - cup fresh or canned pumpkin, pureed 

In a large skillet or dutch oven, brown the meat along with the onion. Drain off any grease.

Add undrained tomatoes, tomato sauce, chili seasoning, water, beans and pumpkin. 

Gently mix everything together until combined. Cover and cook over medium heat for 20 minutes.  

Ladle into bowls and serve with a wedge of cornbread. Garnish with sour cream, shredded cheese and cilantro.  

Recipe Makes: 6 servings 


Oh, and one I've made a few times already! 

Nummy Corn Casserole:

1 box Jiffy 
1 can cream corn 
1 can whole kernel corn, drained 
2 eggs 
1 stick butter, melted 
1 Cup Sour cream

Mix all together in casserole adding the sour cream last. Bake in 350 oven for 45 minutes.

Indian Take 2!

So I know we missed the buffet, again. :-/ But I think we totally made up for it, right!? I think the staff was SO nice and spending the time with you was amazing, as usual . Just like the one last week... do we attempt the 3rd next week? LOL maybe we'll wait a couple weeks. :-)

So I found the menu for the new items we tried, and I totally didn't understand him when he said the soup but the menu stated which one, which is totally what I was listening to hear him say.. Oh well!

MULLIGATWANY SOUP
Delicately spiced lentil soup.

CHICKEN TANDOORI
Chicken marinated in yogurt and mild spices with its own natural juices, roasted in our tandoor oven.

VEGETABLE KORMA
Mixed vegetables marinated in yogurt and cooked in a creamy sauce.

LAMB ROGAN JOSH
Cubes of lamb marinated in exotic spices and cooked with chopped tomatoes in a creamy sauce.  (we definitely didn't have cubes, but... I know this was it, and it was Nummy!

KHEER (RICE PUDDING)
A famous Indian sweet dish,made from milk, rice, and flavored with cardamom.

And of course, the tandoori appetizers, pakora, papadum, samosas and naan were great! I agree that the garlic naan was better than the regular but the regular tasted great when dipping in the tandoori!

Anniversary Dinner... Mmmm Indian!

WOW what an amazing meal we had last night! I'm so glad to FINALLY have someone in my life that I can go on food adventures with... I love how I can just plan on something and know almost guaranteed that you'll love it!

Dinner was absolutely amazing. I've always known I'd love Indian food.. I've only tried 1 curry dish and a couple apps before.. but nothing like a real meal... YUM, it was ALL great!

I wanted to list out the things we had, so we remember them for the future!

ASSORTED APPETIZER (FOR TWO)
Samosa, Pakoras, and Papadum.    

VEGETABLE SAMOSA
Crisp turnover, filled with mildly spiced potatoes and peas.

PAKORA
Mixed vegetable fritters, fried and delicately spiced.

PAPADUM
A thin and crispy lentil flat bread; with mint/onion and mango chutneys

TANDOORI ASSORTED APPETIZERS
Combination of chicken tikka, malai kabab, seekh kabab and shrimp

CHICKEN TIKKA
Tender boneless pieces of chicken marinated in yogurt with fresh spices , cooked on a skewer in the clay oven

MALAI KABAB
Mild, tasty tender pieces of chicken are marinated in special spices, barbequed on a skewer in the Tandoor

SEEKH KABAB
Ground lamb mixed with onions , green peppers, marinated with herbs & spices then broiled On a skewer over charcoal in the Tandoor

TANDOORI PRAWN
Fresh king-sized shrimp gently seasoned and slowly broiled over charcoal in the Tandoor and served on sizzler with vegetables

OTHER

Off-Menu Recommended Entree: Chicken, Coconut w/ Basmati rice, medium spiciness

GARLIC NAAN
Teardrop-shaped traditional Punjabi bread seasoned with fresh garlic, baked in the Tandoor

INDIAN MASALA TEA
Hot Chai tea

MANGO LASSI
A delicious smoothing yogurt sweet drink
